The largest piece of cut footage would be the infamous "bigg's scenes" In this scene Luke is working on a moisture vaporator when he just happens to see a glint of light in the sky. Looking through his binoculars he sees the battle between the Tantive IV and the Star Destroyer. He races into town to a garage where a few of his friends are (one of them is Biggs). He takes his friends out and tries to show them th battle, but by the time they get outside the battle is over. After the group returns inside Biggs takes Luke out for a walk. He tells luke that he plans on abandoning his Imperial post and joining the Rebel Alliance. I haven't seen them yet but there is supposedly full video files of these scenes on the recently released Star Wars: Behind the Magic CD-ROM.

There is more Biggs footage on Yavin 4 before the fighters take off to attack the death star, which thanks to the Special Edition, we have all seen.
Also thanks to the special edition we have now scene a completed version of the Jabba scene on Tatooine. Uncompleted footage of this scene can be scene on the "From Star Wars to Jedi" documentary video. An interesting note is that George Lucas had originally planned on doing this scene in the same manner. Wherein a creature of some sort would be super-imposed over the actor who was filmed in Jabba's place. Due to the limits of time, money, and 1976 technology it wasn't cost effective to finish this scene at that time.

When Luke threw the grappling hook, he missed the first time and had to try again.
During the end battle, one X-wing crashed directly into a Tie Fighter. This piece is now covered up by an additional shot of an x-wing flying away and the lines "Good Shooting Wedge..."
